Maple Syrup Production
We love sugaring here at the homestead. Sugaring season varies from year to year, but usually starts sometime in February and ends sometime in March. We sugar the simple, old-fashioned way-- with buckets hanging from trees and a big fire outside to slowly boil the sap, evaporate the water, and finally end up with maple syrup. We sell a small quantity of maple syrup each year, but mostly we use our syrup to sweeten our maple birch soda and to cook and bake with throughout the year.
